FoodData Central carries no record for tiger nuts (Cyperus esculentus). Published analyses of the tuber disagree with each other by a wide margin (carbohydrate content alone is reported anywhere from about 46% to 64% across studies), too wide a spread to state a single figure as fact, so none is claimed here rather than picking a point in that range. The soaked, blended tubers are strained out and the sugar a finished horchata de chufa carries comes almost entirely from the sugar added at the end, which is on its own ingredient line.
