Composition
USDA FoodData Central (SR Legacy) · 169928. Peaches, yellow, raw. Public domain. FoodData Central carries no white peach cultivar separately, and white and yellow peaches are close enough in sugar and acid that no correction is made; a Bellini is made specifically with white peaches for their paler colour and lower acidity, which the acidPercent figure below does not capture since no titratable-acidity source was found for peach at all, only left at 0 rather than invented. No measured liquid density exists for a peach; the juice-sweet class (1.05) is close but this is a whole fruit pureed with its pulp rather than a clarified juice, so 1.03 is taken as a slightly lighter estimate between the juice class and plain water, marked estimated throughout.
