A wild culture of yeast and bacteria built up over several days by feeding grated ginger and sugar water, used a spoonful at a time to inoculate a larger batch. What it carries into that batch is a live culture rather than a measurable food, so no composition is claimed here; the sugar and ginger it was fed on are each already accounted for on their own ingredient records where a recipe uses them directly.
